1 cup good, strong, freshly-brewed coffee

Banana coconut bread
1/2 cup coconut oil
1/2 cup honey
3 large bananas
2 cups desiccated coconut
1 cup flour (e.g. plain, wholemeal, or buckwheat)
1 teaspoon baking powder
2 lemons, zested
pinch of salt
Preheat oven to 180ºC. Gently melt honey and coconut oil together in a small pot. Use a fork to mix mashed bananas, coconut, flour, honey mixture, eggs, lemon zest and salt together in a large mixing bowl until well combined. Pour into a greased loaf tin and bake for 1 hour or until a skewer inserted into the middle comes out clean.
